Halfway Cookies

This is an old family recipe for toll-house (chocolate chip) cookie bars. Mom didn't make them often, but when she did, they didn't last very long!

1 cup shortening or butter, softened
2 cups flour
1/2 cup white sugar
1/2 cup light brown sugar
1/2 tsp baking soda
1/4 tsp salt
2 egg yolks, slightly beaten w/1 Tbsp water
1 tsp vanilla
Small bag of chocolate chips

Meringue Topping:
2 egg whites
1 cup light brown sugar

  1. In large mixing bowl, mix shortening, flour, sugars, baking soda, salt, egg yolks and vanilla.
  2. Press dough evenly in 8 x 12” pan (or similar). Sprinkle chocolate chips and press into dough.
  3. Beat egg whites stiff, gradually add brown sugar, beating after each add. Spread evenly over top.
  4. Bake 40 min at 350º
